In most people’s books, Pancake Day (Shrove Tuesday) can never come too soon, so its good news then that it’s coming early this year on 21st February. Traditionally it was a time to use up rich foods in the store cupboard before the fasting season of Lent, but now it’s more often than not simply seen as a legitimate excuse to indulge in a stack of delicious steaming pancakes. And with the pancake recipes below all adding a bit of fruit or veg to the equation, there’s less reason to feel guilty about giving in to a little pancake pleasure!
