Cheesy Rainbow Mash is an easy toddler recipe for busy mums to quickly prepare for all the family and a great way to get those vegetables eaten!
How to make Cheesy Rainbow Mash
- 3 sweet potatoes
- 2 handfuls of frozen mixed veg
- 1 red onion
- 4 closed cup mushrooms
- grated cheese
- Peel and chop the sweet potatoes. Rinse and place in a pan. In the same pan, add the frozen mixed vegetables.
Boil for about 15 mins untill the potatoes are soft. Drain and mash. Leave to one side.
- Peel and thinly slice the onion and mushrooms. Fry in a little butter / oil till soft.
- Add to the mash. Add the grated cheese, mix well and serve.
