    A quick and healthy Greek salad with a white wine vinaigrette. 
    Greek Salad

    • 1 cucumber, peeled, split down the middle and cut into 2cm chunks
    • 2 beef steak tomatoes, cut into thick chunks (same size as the cucumber)
    • 3 small red onions, quartered, or if larger, cut in quarters and then cut those in half again
    • 200 g feta cheese, cubed
    • 20 olives, pitted
    • 2 tbsp mint leaves, chopped
    • 2 tbsp White wine vinegar
    • 4 tbsp olive oil
    • 2 tsp sugar
    • Juice of 1/2 lemon
    How to make Greek Salad
    1. Toss the cucumber, tomatoes, red onion, feta and olives together.
    2. For the dressing, whisk together the white wine vinegar, olive oil, sugar and lemon juice.
    3. Pour over the salad and sprinkle with chopped mint.
