Ice Cream Bombe Recipe

Simple Stylish and everyone's favourite. Great for all the family to enjoy.


Ingredients
Ice cream bombe

  • 1 tsp. oil
  • 300g chocolate (dark, milk or white)
  • 500ml good quality ice cream
  • Icing sugar for sprinkling over the top to serve
  • 300-400g in total of a mix of any of the following: glace cherries, dried cranberries, cut mixed peel, other dried fruit, mincemeat, nuts, marshmallows, maltesers, chocolate chips or chopped up chocolate.
  • Liqueur

How to make to Ice Cream Bombe

  1. If time allows, it's better to soak the dried fruit in the liqueur overnight or for a few hours before mixing up!
  2. Oil a large sheet of clingfilm, cover it with a thick layer of cooled melted chocolate, and use to line a small mixing bowl (chocolate on the inside).  Put in the freezer to set.
  3. Mix a tub of your favourite ice cream (softened but not thawed) with your choice of chopped nuts, glace cherries, dried cranberries, mincemeat, dried fruits, splash of liqueur (Amaretto, Cointreau, brandy, etc), add any other goodies you fancy such as mini marshmallows, chocolate chips, chopped up chocolate coins (remove foil!), etc...
  4. Press the ice cream/fruit mixture into the chocolate shell and return to freezer for several hours to harden.
  5. Take out of freezer half an hour before serving, turn onto a cake stand, peel off clingfilm (it should leave a nice textured effect), dust with icing sugar and garnish... and voila!  Absolutely fantastic!!
