These taste absolutely delicious and they are just about as healthy as cookies can get! These cookies are amazingly easy to make, and have a crumbly-cakey texture to them. Quick and easy and PERFECT with warm milk, natural yoghurt, or just a tastey and healthy treat. Instead of raisins, try chopped dates, small pieces of ginger, chocolate chips...go crazy!
Ingredients
- 75g raisins
- 2 tablespoons of ground almonds
- 50g Ready Brek
- 50g whole oats
- 50g white plain flour
- 50g whole-meal flour
- 1 teaspoon of ground cinnamon
- 1 teaspoon of bicarbonate of soda
- A pinch of salt
- 5 tablespoons of vegetable oil
- 5 tablespoons of maple syrup
- 5 tablespoons of brown rice syrup
- 1 teaspoon of vanilla extract
How to Make The Healthiest Raisin and Oat Cookies
- Preheat oven to 190°C (350°F) Gas 4
- Line baking sheets with baking paper
- Put the raisins in a cup and cover with boiling water to plump them up
- Combine all the dry ingredients in a large mixing bowl
- Mix the wet ingredients in a small bowl and add to the dry ingredients bowl. Mix well
- Drain the raisins and fold them into the mixture
- Place large spoonfuls of the mixture onto the baking sheets
- Bake in the oven for about 12-15 minutes until browned
- Cool on a wire rack
