Vegetable Cakes

Getting your little one to eat vegetables can be difficult at the best of times but our Vegetable Cakes combine the goodness of vegetables in a way that toddlers love to eat. This recipe can be made ahead of time so you can just pop the vegetable cakes into the oven when you are ready to eat, making this a great time saving recipe for the busy mum or dad! You could serve these vegetable cakes on their own as finger food when cooled or in a bun for an older toddler. You could even make this a family meal to eat together. Either way these toddler vegetable cakes are the scrummiest vegetable cakes you will ever make and eat! 
Vegetable Cakes

Ingredients 
  • Vegetables of your choice, like – swede, parsnip, turnip, carrot, pumpkin, butternut squash, cabbage, spinach
  • 2 small potatoes with their skin on 
  • olive oil
  • Plain flour
How to make Vegetable Cakes
  1. Cube all the vegetables and just cover with water in a large pan 
  2. Bring to the boil and cook until the vegetables are nice and soft (don’t over boil). 
  3. Strain the vegetables through a colander and leave to drain for 2 mins to remove as much of the water as possible. 
  4. With a masher or ricer mash/rice the vegetables 
  5. Add a very small amount of the oil and enough flour to make workable dough. 
  6. Leave to cool; you could pop the mixture in the fridge to speed this process up. 
  7. Form the mixture into burger size patties. 
  8. On a baking parchment baking tray place the formed patties and cook in the centre of the oven at 200°C for 10-15 minutes or until golden and brown.
