A quick and healthy Greek salad with a white wine vinaigrette.
Ingredients
- 1 cucumber, peeled, split down the middle and cut into 2cm chunks
- 2 beef steak tomatoes, cut into thick chunks (same size as the cucumber)
- 3 small red onions, quartered, or if larger, cut in quarters and then cut those in half again
- 200 g feta cheese, cubed
- 20 olives, pitted
- 2 tbsp mint leaves, chopped
- 2 tbsp White wine vinegar
- 4 tbsp olive oil
- 2 tsp sugar
- Juice of 1/2 lemon
How to make Greek Salad
- Toss the cucumber, tomatoes, red onion, feta and olives together.
- For the dressing, whisk together the white wine vinegar, olive oil, sugar and lemon juice.
- Pour over the salad and sprinkle with chopped mint.
