Chocolate Banana Bars

These bars are very moist with a rich banana and chocolate flavour. They are an after-school snack that toddlers and pre-school children will beg for time after time. 
Chocolate Banana Bars

Ingredients 

Sponge base
  • 175g butter, at room temperature
  • 175g caster sugar
  • 3 eggs, beaten
  • 250g self-raising flour
  • 1 teaspoon baking powder
  • 2 bananas, peeled and roughly mashed 
Frosting 
  • 50g butter 
  • 25g cocoa powder 
  • 250g icing sugar 
  • 1-2 tablespoons of milk chocolate sprinkles 
How to make Chocolate Banana Bars 
  1. Cream the butter and sugar together in mixing bowl until pale and fluffy. 
  2. Gradually mix in alternate spoonfuls of beaten egg and flour until all has been added and the mixture is smooth. 
  3. Add the baking powder and mashed bananas and mix well. 
  4. Spoon the mixture into a 18 x 28cm baking tin lined with non-stick baking paper, and level the surface. 
  5. Bake in a pre-heated oven 180°c (350°F) or gas mark 4, for 25-30 minutes until well risen. 
  6. The cake should be golden and spring back when gently pressed with a fingertip. 
  7. Cool in the tin. 
For the frosting 
  1. Heat the butter in a saucepan. 
  2. Stir in the cocoa powder and cook gently for 1 minute. 
  3. Remove the pan from the heat and mix in the icing sugar. 
  4. Return to the heat and heat gently stirring until melted and smooth.
