These bars are very moist with a rich banana and chocolate flavour. They are an after-school snack that toddlers and pre-school children will beg for time after time.
Ingredients
Sponge base
- 175g butter, at room temperature
- 175g caster sugar
- 3 eggs, beaten
- 250g self-raising flour
- 1 teaspoon baking powder
- 2 bananas, peeled and roughly mashed
Frosting
- 50g butter
- 25g cocoa powder
- 250g icing sugar
- 1-2 tablespoons of milk chocolate sprinkles
How to make Chocolate Banana Bars
- Cream the butter and sugar together in mixing bowl until pale and fluffy.
- Gradually mix in alternate spoonfuls of beaten egg and flour until all has been added and the mixture is smooth.
- Add the baking powder and mashed bananas and mix well.
- Spoon the mixture into a 18 x 28cm baking tin lined with non-stick baking paper, and level the surface.
- Bake in a pre-heated oven 180°c (350°F) or gas mark 4, for 25-30 minutes until well risen.
- The cake should be golden and spring back when gently pressed with a fingertip.
- Cool in the tin.
For the frosting
- Heat the butter in a saucepan.
- Stir in the cocoa powder and cook gently for 1 minute.
- Remove the pan from the heat and mix in the icing sugar.
- Return to the heat and heat gently stirring until melted and smooth.
