A simple all -in-one sponge cake that's guaranteed to 'wow'! An ideal baking recipe to make with your toddler or pre-school child for all the family to enjoy!
Ingredients
- 225g/8oz caster sugar
- 225g/8oz softened butter
- 4 eggs, lightly beaten
- 225g/8oz self-raising flour
- 1tsp baking powder
- About 400ml/7fl oz double cream
- handful of strawberries or raspberries, sliced
- punnet of blueberries
- punnet of raspberries
How to Make the Celebration Sandwich Cake
- Preheat oven to gas mark 5/190°C (170°C in a fan oven). In bowl of a food mixer add sugar, butter, eggs, flour, baking powder and milk, and using beaters, beat to a smooth and creamy batter, about 5-6 mins.
- Using a spatula, divide mixture evenly between tins and smooth tops. Put in oven to bake for about 25-45 mins or until golden on top and bouncy to touch – or insert a skewer and if it comes out clean it is ready (if not, give it a couple more mins). Remove from oven and leave to cool for 10 mins, then release from tins and sit on a cooling rack to cool completely.
- When ready to serve, whisk cream together for filling and topping until it forms soft peaks. Spread half onto base of one sponge, top with strawberries or raspberries and sandwich together.
- Top sponge with remaining cream, then decorate with raspberries to form a cross, then continue with two diagonal lines. Fill in with blueberries so it resembles the Union Jack or any design you wish to have.
