Ingredients: makes 12 cakes
- 100g self raising flour
- 100g softened butter
- 100g caster sugar
- 2 large free range eggs
- 1 teaspoon baking powder
- 1 dessert spoon cocoa powder, dissolved in a little boiled water
For the buttercream
- 100g softened butter
- 100g icing sugar
- Few drops vanilla extract
- 1 dessert spoon cocoa powder
To decorate
- 2 chocolate flakes
- 6 maltesers
- Gold and pearl balls
How to make Simply Scrumptious Cupcakes
- Place all of the ingredients for the cakes apart from the cocoa into a mixing bowl.
- Using a hand mixer, whisk on a medium speed until combined and light and fluffy.
- Carefully spoon half of the mixture into 6 cupcake cases.
- Add the cocoa and mix thoroughly to combine.
- Spoon the remaining mixture into the 6 remaining cases.
- Bake at 180°C (160 fan) for about 20 mins.
- Meanwhile, make the buttercream by combining butter icing sugar and vanilla extract.
- Put half of the buttercream aside and add the cocoa to the remaining mixture. Mix thoroughly.
- When the cakes are cool, pipe vanilla and chocolate swirls on top and decorate with the flakes, Maltesers and sugar balls.
